Β Sinampalukang Manok, is one of my favorite sour soup.
I learned about this dish through my uncle from Cabiao, Nueva Ecija.
It is easy to prepare just like Sinigang.
Ingredients include:
2 tbsp oil
2 gloves of garlic minced
1 onion sliced
1 ginger sliced
1/2 kilos chicken
1/2 cup young Tamarind leaves
6 Tamarind
salt or patis
water
To cook:
1) Saute garlic, onion and ginger in oil.
2) Add chicken, mix well then add salt/patis to taste. Stir for 2 minutes.
3) Add water and bring to boil.
4) Add the Tamarind and young Tamarind leaves.
5) Simmer for 3 minutes and serve hot.
